Breakfast Burrito with Pico Dressing

Name: Breakfast Burrito with a Pico Dressing
Ingredients: 1.5c finely diced tomatoes; .3c finely diced white onion soaked in icewater for 10 minutes; .3c finely diced jalapeño peppers - seeds and ribs removed; .5c chopped cilantro; .3c lime juice; 1t Lowry’s seasoning salt (or flake sea salt); 1t freshly cracked pepper; 1c finely diced avocado; 2c diced roasted potatoes prepared with extra virgin olive oil, salt and pepper; 2.5c oven roasted chopped vegetable mix of red and yellow bell peppers, zucchini and red onions prepared with extra virgin olive oil salt and pepper; 1.5c browned chorizo; 1.5c scrambled eggs; 1.5c Tortilla Croutons - brown grated Cotija and/or cheddar cheese and top with a tortilla (I used a corn/flour blend tortilla), flip and lightly brown other side, cut into 1” squares.
