Name: Apples and Blue Cobb
Ingredients: 1/4c EVOO; 3T White Balsamic vinegar; 2T chopped chives; 2T chopped basil; 1T Shallot; 1oz blue cheese; 2t Dijon; Flake sea salt and freshly ground pepper to taste; 8c spring mix or greens of choice; 1/2c toasted chopped walnuts; 1c rotisserie chicken chopped; ½c shaved fennel; 1 large diced Fuji apple; 1 large diced avocado; 2 shredded carrots (rainbow if you have them)
